You may have seen these on Social Media but I'm coming on here to tell you what they are and what to do with them! We cooked a Chicken simply farm box this week and the results were amazing!
Lets start with what this is NOT! Simply Farm Boxes are not meals portioned out ready to cook! if you want that check out our weekly menu! Simply Farm Boxes are a way for us to share our passion for Agriculture and Homesteading with YOU!
They include Chicken (Grand Champion Broilers from Bosque County) Currently raised by our amazing Niece Brenna! Lamb (Reserve Champion) also raised by this amazing youth. and coming very soon Beef, raised by Brenna and processed at Tarleton State University!
Future offerings will be pasture raised Chickens and Beef raised on out little farmstead in NWA!
Also these delicious boxes come with a dozen farm fresh eggs from our precious hens, a loaf of sourdough bread hand made by me, and freshly picked Veggies and Herbs from our garden!
Lets get down to the Meat & Potatoes! Well no potatoes in these, but Veggies! We tested a Chicken Box this week and are happy to say its provided 4 dinners and leftovers for every one of our lunches so far! Obviously we added some ingredients. Recipe's Below!
Sunday Dinner, Because who doesn't love to cook after church on Sunday!
We had a Delicious Smoked Chicken on the Trager ( 4-5 Hours @ 300* F) with Holy Gospel BBQ Rub.
Along side this we had some roasted Zucchini and Fresh Sourdough Toast
Of course that was ALOT of chicken so after it all had cooled I picked the rest of the chicken off the bone and Chopped it, Saving one whole Breast for Tuesday!
On Sunday evening with a portion of the Chopped Chicken I quickly made a pot pie for an easy bake and go meal. Our oven has a start timer so if I have this frozen I can put it in before a busy work day and come home to a freshly made dinner.
Pot Pie Recipe
1.5 C Chopped Chicken
2.5 C of Frozen Mixed Veggies
2- Premade Pie Crusts
1 - Large Can of Cream of Chicken
1 TBSP Soy sauce ( Trust me here)
Salt and Pepper
Tuesday Wendi made a delicious kale and pasta Salad and we seared off that 2nd Breast from the chicken in some olive oil with sun dried tomatoes!
Recipe
1 Cup of Homemade Pasta Boiled
2 Cups of Kale Chopped
1/4 Cup of Sun Dried Tomatoes, in Juice
1/4 Cup of Parmesan Cheese
2 TBSP Lemon Juice
2 TBSP Olive Oil
Garlic Salt And Pepper to taste!
Served this with toasted Buttered Sourdough!
That's not All! Last night, your getting tired of Chicken dishes I get it! We took the last of the Shredded Chicken, sauteed it with onion, butter, lime juice, chili powder & garlic salt. Paired it with pinto beans & a southwest bagged salad and made a Delicious taco night Dinner!
